Honey is not only a source of glucose, fructose and carbohydrates, but also a means of stimulating the release of serotonin (the so-called “happiness hormone”). We pour fresh honey collected in the Šerkšnai apiary into glass containers, cover it tightly and store it in a dark, cool room. After about three weeks, the honey begins to crystallize and lighten, forming glucose spots on the surface. This is typical only of natural, unheated bee honey.
